We carefully select and source high-quality wine grapes, juice, and single-varietal wine from all over the country and world that is then brought to our on-premise winery and put through the delicate winemaking process, crushed and fermented, aged further, blended, and kegged and/or bottled to make our select brand of Carboy Wines.

2017 Grand Valley Tempranillo

  • WINEMAKER'S NOTES

    This Tempranillo is bold. Utilizing 25% whole cluster fermentation then conditioning for 18 months in a mix of 50% new American and French oak, this wine impresses with powerful cedar, fennel spice aromas mixed with subtle black fruit, plumb, and currant.

Cabernet Franc

  • WINEMAKER'S NOTES

    A very promising wine and a tribute to the growing consistency of Colorado Cab Franc. A delicate wine with fruit flavors that shift from black to blue and red. We aged this wine in new French oak to deliver balanced acid and tannin with hints smoke, tree bark and young fig.

Viognier

    Viognier (pronounced “Vee-own-yay”) is traditionally a medium to full-bodied white wine that originated in southern France. Most loved for its perfumed aromas of peach, tangerine and honeysuckle, our Viognier was fermented and aged in French oak-aged to add a rich creamy taste with hints of vanilla and balanced acidity.

Rosé

  • WINEMAKER'S NOTES

    This Rosé is made in the saignée method, by "bleeding" juice from Cabernet Sauvignon tanks prior to fermentation. The juice, pink in color due to its minimal skin contact, is inoculated and fermented to dryness in stainless steel. Prior to kegging, the wine received minimal filtration and fining to preserve the fresh fruit flavors.
